Design and Implementation of Rapid Cooling Tunnels for Packaged Processed Cheese
On behalf of our partner, a leading industrial player in the cheese sector in Tunisia, we designed and implemented rapid cooling tunnels to lower the core temperature of high-temperature packaged processed cheese. The main challenge within these tunnels was to overcome the constraints posed by the three successive layers of packaging surrounding the product and to reduce its temperature from 65°C to 25°C in a very short time.
